What is loroco pupusa?

Loroco pupusa is a traditional Salvadoran dish made of masa (a type of dough made from corn) that is stuffed with loroco, a type of edible flower bud. The loroco is typically sautéed with onions and added to the filling mixture, which may also include cheese, beans, or meat. The pupusa is then flattened and cooked on a griddle until crispy on the outside and soft on the inside. Loroco pupusa is often served with curtido, a pickled mixture of cabbage, carrots, and onions, and tomato sauce. Pupusas are a staple food in El Salvador and are consumed throughout Central America and parts of the United States with large Salvadoran populations.
